Ingredients

1 lb lean ground beef
1 small onion, finely diced
2 cloves garlic, minced
2 cups white rice, cooked
10.5 oz cream of mushroom soup
1/2 cup beef broth
2 cups cheddar cheese, freshly shredded
1 tsp paprika
Salt and pepper to taste


Instructions

Preheat your oven to 350°F (175°C) and apply non-stick cooking spray to a 9×13-inch baking dish.
Brown the ground beef and diced onion in a large skillet over medium heat until the meat is fully cooked.
Drain excess grease from the skillet.
Stir in the minced garlic and sauté for 30 seconds until aromatic.
In a medium bowl, whisk together the cream of mushroom soup, beef broth, paprika, salt, and pepper until smooth.
In the baking dish, combine the cooked rice, beef mixture, half of the shredded cheese, and the soup sauce mixture.
Spread the remaining cheese evenly over the top of the casserole.
Cover the dish with foil and bake for 35 minutes until bubbly and the cheese is melted.

Notes

You can substitute ground turkey for ground beef if preferred. Cream of chicken soup acts as a suitable alternative to cream of mushroom. Using beef broth instead of milk adds extra savory depth to the sauce. Ensure you use pre-cooked or leftover rice for the best results.
