A vibrant summer salad that reimagines the classic Caprese with the addition of ripe blueberries. Combining buffalo mozzarella, fresh basil, and a balsamic glaze, it’s a nutrient-rich, colorful dish perfect for summer gatherings or high-end dinner parties.
Ingredients
1 pint blueberries, fresh
2 pints cherry tomatoes
8-10 oz firm buffalo mozzarella
1/2 cup fresh basil leaves
2-3 tbsp balsamic vinegar
1/4 cup extra virgin olive oil
Salt and pepper, to taste, preferably flaky sea salt and freshly cracked black pepper
Instructions
Wash and drain the blueberries thoroughly
Rinse the cherry tomatoes and pat them dry
Halve the buffalo mozzarella into 1-inch thick slices
Arrange the mozzarella, tomatoes, and blueberries on a serving platter in an alternating pattern
Tear basil leaves by hand and scatter them over the platter
Drizzle with olive oil and balsamic vinegar
Season the salad with flaky sea salt and freshly cracked black pepper just before serving
Notes
Use heirloom cherry tomatoes for a more colorful presentation
Ensure blueberries are completely dry to prevent sogginess
For a prettier presentation, slice the mozzarella into star shapes
