Ingredients
1 large whole wheat tortilla or gluten-free flatbread
2 wedges The Laughing Cow Cinnamon Cream Cheese or plain cream cheese + 1/4 tsp cinnamon and stevia
1/2 cup frozen blueberries
Nonstick cooking spray or coconut oil spray
Instructions
Heat a nonstick skillet over medium-high heat
Spray the skillet with cooking spray or add a light coating of coconut oil
Place the tortilla in the skillet and cook for 1 minute until lightly toasted
Add the cinnamon cream cheese wedges on one half of the tortilla
Sprinkle the frozen blueberries evenly across the cream cheese half
Lift edges of the tortilla to let blueberries soften (1-2 minutes)
Fold the tortilla over the filling and cook 1-2 minutes until golden-brown and crepe-like
Transfer to a plate and serve warm
Notes
Use frozen blueberries for optimal juice
Substitute fresh blueberries but add 1 tsp water to mimic melting effect
For vegan option: use dairy-free cinnamon cream cheese and vegan tortilla
