The best cheeseburger soup recipe made with ground beef, potatoes, cheddar cheese, and crispy bacon in a creamy broth.
Ingredients
5 strips bacon, chopped
1 lb lean ground beef
4 Tbsp butter
½ medium onion, chopped
2 ribs celery, chopped
2 carrots, chopped
1 Tbsp minced garlic
⅓ cup all-purpose flour
4 cups chicken broth
1 cup heavy cream
1 Tbsp yellow mustard
1 lb russet potatoes, diced
2 cups shredded cheddar cheese
1 Tbsp lemon juice
Salt and pepper to taste
Instructions
1. Cook bacon until crispy and set aside.
2. Brown ground beef and drain.
3. Sauté onion, celery, and carrots in butter.
4. Add garlic and flour.
5. Whisk in broth.
6. Add cream, mustard, potatoes, and beef.
7. Simmer until potatoes are tender.
8. Stir in cheese and lemon juice.
9. Season and top with bacon.
Notes
Add extra broth if soup thickens.
