Individual baked pancakes with fluffy, cake-like texture fueled by Greek yogurt and plant-based protein powder. Quick, portable breakfast rich in protein and complex carbs for sustained energy.
Ingredients
1 large egg
50 g Greek yogurt
70 ml milk
35 g all-purpose flour
25 g vanilla protein powder
5 g zero calorie granulated sweetener
1/2 tsp baking powder
Instructions
Preheat oven to 200°C (350°F)
Grease a 6-inch oven-safe bowl with cooking spray
Whisk egg, yogurt, milk, and sweetener in a bowl
Add flour, protein powder, and baking powder, stir until smooth
Pour batter into prepared bowl
Bake for 20-22 minutes until golden and toothpick comes out clean
Let cool slightly before serving
Notes
Use flax egg (1 tbsp ground flax + 3 tbsp water) for vegan version
Substitute oat flour for heartier texture
Top with fresh berries or cinnamon
Store leftovers in airtight container up to 2 days
