Description
Authentic Canadian poutine made with crispy double-fried fries, rich homemade gravy, and fresh cheese curds. A classic comfort food loved worldwide.
Ingredients
4 pounds Russet potatoes, cut into sticks
Vegetable oil for frying
Salt to taste
For gravy:
6 tbsp unsalted butter
1/4 cup all-purpose flour
4 cups beef or chicken stock
2 tbsp ketchup
1 tbsp Worcestershire sauce
1/2 tsp salt
1/2 tsp black pepper
3 tbsp cornstarch
2 tbsp water
2 cups cheese curds
Instructions
1. Soak cut potatoes in cold water for at least 1 hour.
2. Drain, rinse, and dry thoroughly.
3. Heat oil to 300°F and fry potatoes for 4–5 minutes.
4. Remove and drain.
5. Increase oil to 400°F and fry again until crispy.
6. Season fries with salt.
7. In a saucepan, melt butter and whisk in flour.
8. Add stock gradually and stir until smooth.
9. Add ketchup, Worcestershire, salt, and pepper.
10. Mix cornstarch with water and add to thicken gravy.
11. Place fries on plate, top with cheese curds.
12. Pour hot gravy over and serve immediately.
Notes
Use fresh cheese curds for authentic texture.
Double frying is essential for crispy fries.
Serve immediately for best results.
