Description
Healthy anti-inflammatory red lentil soup made with turmeric, cumin, vegetables, and fresh lemon juice.
Ingredients
1 cup red lentils, rinsed
2 Tbsp olive oil
1 medium onion, chopped
2 carrots, chopped
1 celery stalk, diced
1 tsp turmeric powder
½ tsp ground cumin
½ tsp salt
½ tsp black pepper
4 cups water
Juice of ½ lemon
1 Tbsp fresh parsley, chopped
Instructions
1. Sauté onion in olive oil until soft.
2. Add carrots and cook briefly.
3. Add celery, lentils, spices, and water.
4. Bring to a boil, then simmer until lentils are tender.
5. Finish with lemon juice and parsley.
Notes
Add more water for thinner soup.
Blend if a smoother texture is preferred.
Serve warm.
