Description

This healthy, vibrant one-pan meal brings the bold flavors of Southern-inspired Cajun cooking to your table in under thirty minutes. Featuring succulent shrimp, perfectly crisped halal chicken sausage, and garden-fresh vegetables, it utilizes the air fryer to achieve an impeccable sear. Ideal for busy weeknights, this high-protein, nutritious dish ensures a flavorful, tender result with minimal cleanup required.

Ingredients

1 tbsp Cajun seasoning
24 extra jumbo shrimp, peeled and deveined
6 oz halal chicken sausage, sliced
8 oz zucchini, sliced into quarter-inch pieces
8 oz yellow squash, sliced into quarter-inch pieces
1 large red bell pepper, cut into one-inch pieces
1/4 tsp kosher salt
2 tbsp olive oil

Instructions

Place the shrimp in a large mixing bowl and add the Cajun seasoning, tossing until evenly coated.
Add the sliced chicken sausage, zucchini, yellow squash, and red bell peppers to the shrimp.
Drizzle with olive oil and toss everything together until well combined.
Sprinkle with kosher salt to season the vegetables.
Preheat air fryer if required by model, typically to 400°F.
Transfer the mixture to the air fryer basket, ensuring it is spread in an even layer.
Air fry for 18 minutes, shaking the basket halfway through to ensure even caramelization and char.
Serve immediately while hot.

Notes

If using pre-made Cajun seasoning, check the label for sodium content and adjust the added salt accordingly. Do not overcrowd the air fryer basket; cook in batches if necessary for optimal crisping. Store leftovers in an airtight container for up to 2 days.
