Ingredients
2 1/2 cups all-purpose flour
1 1/2 cups cake flour
2 tsp cornstarch
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 cup cold unsalted butter, cubed
1 cup packed brown sugar
1/2 cup granulated sugar
2 large eggs
3 cups milk chocolate chips
Red, white, and blue gel food coloring
Shimmering edible stars (optional)
Instructions
Preheat oven to 375°F (190°C). Place butter cubes in a 9×13-inch parchment-lined baking sheet.
Whisk all-purpose flour, cake flour, cornstarch, baking soda, baking powder, and salt.
Add sugars to butter. Pulse in a food processor until crumbly but not smooth (2-3 pulses).
Add 1 egg at a time until dough forms a loose clump. Avoid overprocessing. Divide into 3 portions.
Add red, white, and blue gel to each portion. Knead gently until just combined (no overmixing).
Press each dough into a sheet. Stack and lift gently 6 times to create layers.Spread into a circle. Flip half the dough over for a red/white-blue swirl. Top with chocolate chips and edible stars (optional).
Bake 10 minutes until edges are set but centers remain tender. Cool completely before serving.
Notes
Butter must remain cold for proper texture
Use gel coloring to prevent dough from thinning
Shimmering stars can be purchased at bakery supply stores
