Description
Weight Loss Cabbage Soup is a light, healthy vegetable soup made with cabbage, carrots, celery, tomatoes, and herbs. A low-calorie, comforting meal ready in 30 minutes.
Ingredients
6 cups vegetable broth
1 large head green cabbage, chopped
1 yellow onion, chopped
3 garlic cloves, minced
3 carrots, chopped
3 celery ribs, chopped
1 (28 oz) can diced tomatoes with juices
½ teaspoon kosher salt
½ teaspoon black pepper
½ teaspoon dried oregano
½ teaspoon dried basil
Instructions
1. Chop all vegetables into bite-size pieces.
2. Add all ingredients to a large soup pot.
3. Bring to a boil, then reduce heat and simmer 20 minutes.
4. Cook until cabbage and carrots are tender.
5. Adjust seasoning and serve hot.
Notes
Green cabbage is recommended for best color.
Soup stores well for meal prep.
