Description
The best homemade vegetable soup packed with fresh vegetables, herbs, and bright lemon flavor.
Ingredients
2 tbsp olive oil
1 medium onion, diced
4 carrots, sliced
3 celery ribs, sliced
4 garlic cloves, minced
2 tsp Italian seasoning
1 tsp kosher salt
1/2 tsp black pepper
3 Yukon gold potatoes, diced
1 1/2 cups green beans
2 cans diced tomatoes
2 bay leaves
6–8 cups vegetable broth
1 cup frozen corn
1 cup frozen peas
2–3 tbsp lemon juice
1/4 cup fresh parsley
Instructions
1. Saute onion, carrots, and celery.
2. Add garlic and seasoning.
3. Add remaining vegetables and broth.
4. Simmer until tender.
5. Add corn and peas.
6. Finish with lemon and parsley.
Notes
Adjust broth for thickness.
Add extra pepper if desired.
