Description

Soft and chewy toffee pecan cookies filled with buttery caramel flavor, crunchy toasted pecans, and rich toffee bits.


Ingredients

1 cup unsalted butter, softened

1 cup granulated sugar

1 cup brown sugar, packed

2 large eggs

2 tsp vanilla extract

3 cups all-purpose flour

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

1 1/2 cups toffee bits

1 1/4 cups chopped pecans


Instructions

1. Preheat oven to 350°F and line baking sheets with parchment.

2. Cream butter and both sugars until light and fluffy.

3. Mix in eggs and vanilla until smooth.

4. Whisk flour, baking soda, baking powder, and salt in a separate bowl.

5. Slowly add dry mixture to wet mixture on low speed.

6. Fold in toffee bits and pecans.

7. Scoop dough onto baking sheets, leaving space to spread.

8. Bake 10–12 minutes until edges are lightly golden.

9. Cool on the cookie sheet before transferring to a rack.

Notes

For extra flavor, toast the pecans before adding them to the dough. Chill dough 20–30 minutes if you prefer thicker cookies.
