Description
Strawberry shortcake sheet cake made with fluffy vanilla cake, whipped cream frosting, and fresh strawberries. A perfect dessert for summer gatherings.
Ingredients
2 1/2 cups all purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1 3/4 cups granulated sugar
1/2 cup vegetable oil
2 large eggs
2 large egg whites
2 1/2 teaspoons vanilla extract
1/2 teaspoon almond extract
2/3 cup sour cream
3/4 cup milk
6 ounces cream cheese
3/4 cup powdered sugar
1/2 teaspoon vanilla extract
1 1/2 cups heavy whipping cream
5 cups sliced strawberries
2 tablespoons strawberry jam
Instructions
1. Preheat oven to 350°F and grease a 9×13 inch baking pan.
2. Whisk flour baking powder and salt in a bowl.
3. Beat sugar oil eggs egg whites and extracts until combined.
4. Mix in sour cream.
5. Add half the flour mixture then milk then remaining flour mixture.
6. Pour batter into pan and spread evenly.
7. Bake for 25 to 30 minutes until a toothpick comes out clean.
8. Cool the cake completely.
9. Beat cream cheese powdered sugar and vanilla until smooth.
10. Slowly add heavy cream and whip until stiff peaks form.
11. Spread frosting on the cooled cake.
12. Mix strawberries with jam and spoon over cake before serving.
Notes
Allow cake to cool before frosting.
Add strawberries just before serving.
Store cake in the refrigerator.
