Description

Strawberry Shortcake Cookies packed with freeze-dried strawberries, Golden Oreos, and white chocolate chips. Thick, soft, and bakery-style.


Ingredients

1 1/4 cup all-purpose flour

3/4 cup cake flour

1 tsp cornstarch

1/2 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

8 Tbsp unsalted butter, cold and cubed

1/2 cup brown sugar

1/4 cup granulated sugar

1 large egg

1 large egg yolk

1 tsp vanilla extract

2 tsp strawberry emulsion

15 Golden Oreos, chopped

1.2 oz freeze-dried strawberries

3/4 cup white chocolate chips


Instructions

1. Preheat oven to 375°F.

2. Whisk dry ingredients.

3. Cream butter and sugars.

4. Add egg, yolk, vanilla, and strawberry emulsion.

5. Mix in dry ingredients.

6. Fold in Oreos, strawberries, and white chocolate.

7. Shape into 6 large cookies.

8. Bake 10–12 minutes.

9. Cool before serving.

Notes

Use cold butter for thick cookies.

Do not overbake.

Store airtight up to 4 days.
