Description

Easy strawberry pound cake made with Greek yogurt and fresh strawberries, topped with a sweet strawberry glaze. A moist homemade strawberry loaf cake perfect for spring desserts.


Ingredients

1 1/2 cups all purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

1 cup plain Greek yogurt

1 cup sugar

3 large eggs

1 1/2 teaspoons almond extract

1/2 cup vegetable oil

1 cup diced strawberries

1/2 cup smashed strawberries

2 cups powdered sugar


Instructions

1. Preheat oven to 350°F and prepare a loaf pan with nonstick spray.

2. Whisk flour baking powder and salt in a bowl.

3. In another bowl mix Greek yogurt sugar eggs almond extract and oil.

4. Slowly add dry ingredients and mix until combined.

5. Fold diced strawberries into the batter.

6. Pour batter into prepared loaf pan.

7. Bake about 50 minutes until center is set.

8. Cool in pan for 10 minutes then transfer to rack.

9. Mix smashed strawberries with powdered sugar for glaze.

10. Pour glaze over cooled cake and let set before slicing.

Notes

Use ripe strawberries for best flavor.

Allow cake to cool before glazing.

Store cake in airtight container.
