Fluffy strawberry cheesecake pancakes with cream cheese pockets, whipped cream, and homemade strawberry sauce.
Ingredients
2 cups fresh strawberries, halved
1/4 cup sugar
2 Tbsp lemon juice
2 cups all-purpose flour
2 tsp baking powder
1/4 tsp salt
6 oz cream cheese, softened and divided
2 Tbsp granulated sugar
2 large eggs
1 cup buttermilk
2 Tbsp melted butter
1 tsp lemon juice
1 tsp vanilla extract
Whipped cream for serving
Instructions
1. Cook strawberries with sugar and lemon until thickened.
2. Whisk flour, baking powder, and salt.
3. Beat cream cheese and sugar until smooth.
4. Add eggs, buttermilk, butter, lemon juice, and vanilla.
5. Fold wet ingredients into dry ingredients.
6. Fold in cubed cream cheese and rest batter.
7. Cook pancakes until golden.
8. Serve with whipped cream and strawberry sauce.
Notes
Do not overmix batter.
Resting batter improves texture.
Add toppings just before serving.
