Description

Creamy strawberry cheesecake overnight oats made with Greek yogurt, cream cheese, oats, chia seeds, and fresh strawberries. A healthy, no-cook meal prep breakfast.


Ingredients

1/2 cup plain Greek yogurt

3 oz cream cheese, softened

1 cup almond milk

2 tbsp pure maple syrup

1 tsp vanilla extract

1 cup old fashioned oats

1 tbsp chia seeds

1/2 cup fresh strawberries, diced

Pinch of salt

1/2 cup strawberries (for reduction)

1 tbsp maple syrup (for reduction)


Instructions

1. Whisk cream cheese, Greek yogurt, almond milk, maple syrup, and vanilla until smooth.

2. Stir in oats, chia seeds, salt, and diced strawberries.

3. Transfer mixture to an airtight container and refrigerate overnight.

4. Add strawberries and maple syrup to a small saucepan over medium heat.

5. Simmer and mash strawberries until thick and jam-like.

6. Cool strawberry reduction.

7. Serve overnight oats topped with strawberry reduction.

Notes

Store overnight oats up to 4 days in the refrigerator.

Keep strawberry reduction separate until serving for best texture.

Use dairy-free yogurt and cream cheese for a vegan option.
