Description

Classic strawberry cheesecake made with creamy baked cheesecake filling, graham cracker crust, and homemade strawberry topping.


Ingredients

2 cups graham cracker crumbs

1/4 cup sugar

6 tablespoons melted butter

32 ounces cream cheese

1 1/3 cups sugar

1 cup sour cream

1 tablespoon vanilla extract

1/4 teaspoon salt

4 eggs

16 ounces strawberries

2 tablespoons cornstarch

1 cup sugar

2 teaspoons vanilla

1/8 teaspoon salt

2 cups chopped strawberries


Instructions

1. Preheat oven to 350°F.

2. Mix graham cracker crumbs sugar and melted butter.

3. Press mixture into springform pan and bake crust.

4. Beat cream cheese until smooth.

5. Add sugar and sour cream.

6. Mix in vanilla and salt.

7. Fold in eggs.

8. Pour filling over crust.

9. Bake cheesecake in water bath.

10. Cool in oven then refrigerate.

11. Blend strawberries with cornstarch.

12. Cook mixture with sugar until thick.

13. Add vanilla salt and chopped strawberries.

14. Top cheesecake with strawberry sauce before serving.

Notes

Use room temperature cream cheese.

Bake cheesecake in water bath to prevent cracks.

Chill cheesecake overnight for best texture.
