Description
Spinach and Potato Soup made with tender potatoes, fresh spinach, and a light creamy broth.
Ingredients
2 tablespoons butter
1 onion, diced
2 garlic cloves, minced
1/2 teaspoon paprika
1/2 teaspoon Italian herbs
1.5 lb potatoes, diced
2 1/4 cups vegetable broth
1 cup milk
1/4 cup all-purpose flour
1 tablespoon soy sauce
1 teaspoon salt
1/8 teaspoon black pepper
4 oz baby spinach
Instructions
1. Sauté onion in butter.
2. Add garlic and spices.
3. Add potatoes and broth.
4. Simmer until tender.
5. Add milk slurry and soy sauce.
6. Season to taste.
7. Add spinach and wilt.
8. Serve hot.
Notes
Easy to digest.
Adjust thickness with broth or milk.
