Description

These Soft Peanut Butter Cookies are thick, chewy, and full of rich peanut butter flavor. Made in one bowl with simple ingredients, they bake up perfectly soft with slightly crisp edges in under 30 minutes.


Ingredients

1 cup creamy peanut butter

1/2 cup unsalted butter, softened

3/4 cup dark brown sugar

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 1/4 cups all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt


Instructions

1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. In a large bowl, mix butter, peanut butter, brown sugar, and granulated sugar until smooth.

3. Add egg and vanilla extract; mix until fully combined.

4. Stir in flour, baking soda, and salt until a soft dough forms.

5. Scoop dough into balls and place on baking sheet.

6. Flatten slightly with a fork to create a crisscross pattern.

7. Bake for 9–11 minutes until edges are set and centers remain soft.

8. Cool on baking sheet for 5 minutes, then transfer to a wire rack.

Notes

Do not overbake to maintain a soft texture.

Chill dough for thicker cookies if desired.

Store in an airtight container for up to 4 days.
