A comforting slow cooker honey garlic chicken and veggies recipe featuring tender chicken thighs, hearty vegetables, and a rich honey garlic sauce. Perfect for easy weeknight dinners and meal prep.
Ingredients
4–6 chicken thighs
1/3 cup honey
1/3 cup soy sauce
4 garlic cloves, minced
1/3 cup chicken broth
1 tbsp rice vinegar
1 tsp sesame oil
1/2 tsp black pepper
2 cups baby potatoes
2 cups chopped carrots
1 medium onion, sliced
1 1/2 cups green beans
1 tbsp sesame seeds
2 tbsp chopped parsley or green onion
Instructions
1. Whisk honey, soy sauce, garlic, broth, vinegar, sesame oil, and pepper.
2. Place potatoes, carrots, and onions in slow cooker.
3. Add chicken thighs on top.
4. Pour sauce over everything.
5. Cook on LOW 6–7 hours or HIGH 3–4 hours.
6. Add green beans in the last hour.
7. Serve with rice or on its own.
Notes
Thicken sauce with cornstarch if desired.
Store leftovers up to 4 days or freeze for 3 months.
