Ingredients
4 cups diced russet potatoes
1 medium yellow onion, diced
3 cloves garlic, minced
3 tbsp butter
3 tbsp flour
4 cups vegetable broth
1 cup heavy cream
1 tsp salt
1/2 tsp black pepper
1/2 tsp dried thyme (optional)
1/2 cup shredded cheddar (optional)
2 tbsp sliced green onions
Instructions
1. Sauté onions in butter for 5 minutes, then add garlic.
2. Stir in flour and cook 1-2 minutes.
3. Add potatoes and broth, simmer until tender.
4. Blend part of the soup to desired texture.
5. Stir in cream, season, and simmer 2-3 minutes.
Notes
Use Yukon Gold potatoes for a silkier texture.
Add toppings such as cheddar, green onions, or croutons.
