Description

Shakshouka toast features poached eggs in a spiced tomato sauce served over crispy bread for a healthy and flavorful breakfast.


Ingredients

2 slices hearty bread

1 tablespoon olive oil

1 small onion, chopped

1 bell pepper, chopped

2 cloves garlic, minced

14 oz diced tomatoes

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/4 teaspoon cayenne pepper

Salt and pepper to taste

2 large eggs

Fresh herbs for garnish

Feta cheese (optional)


Instructions

1. Toast bread and set aside.

2. Sauté onion and bell pepper in olive oil.

3. Add garlic and spices and cook until fragrant.

4. Stir in tomatoes and simmer.

5. Create wells and add eggs.

6. Cover and cook until eggs are set.

7. Spoon over toast and garnish.

Notes

Use whole wheat bread for added fiber.

Adjust spice level to taste.

Serve immediately for best texture.
