Ingredients
RED VELVET PANCAKES
1½ cups all-purpose flour
2 tablespoons cocoa powder
1 tablespoon sugar
1 teaspoon baking powder
¼ teaspoon baking soda
1 large egg
1¼ cups buttermilk
2 tablespoons melted butter
Red food coloring
CREAM CHEESE GLAZE
4 oz cream cheese, softened
¼ cup powdered sugar
½ teaspoon vanilla extract
2–3 tablespoons milk
Instructions
1. Whisk together flour, cocoa powder, sugar, baking powder, and baking soda in a bowl.
2. In another bowl, beat the egg and mix in buttermilk, melted butter, and red food coloring.
3. Pour wet ingredients into dry ingredients and stir until just combined.
4. Heat a greased griddle over medium heat.
5. Pour ¼ cup batter for each pancake and cook until bubbles form.
6. Flip and cook until pancakes are cooked through.
7. Whisk together cream cheese, powdered sugar, vanilla, and milk until smooth.
8. Drizzle glaze over warm pancakes and serve.
Notes
Do not overmix the batter to keep pancakes fluffy.
Adjust red food coloring to your desired shade.
Serve with berries or whipped cream for extra flavor.
