Quick and healthy egg muffins made with spinach, feta cheese, and simple Mediterranean-inspired ingredients.
Ingredients
6 large eggs
1 cup fresh spinach, chopped
½ cup crumbled feta cheese
¼ cup milk (optional)
¼ tsp salt
⅛ tsp black pepper
Instructions
1. Preheat oven and grease muffin tin.
2. Whisk eggs with milk, salt, and pepper.
3. Stir in spinach, feta, and add-ins.
4. Fill muffin cups.
5. Bake until set.
6. Cool and serve.
