Description

This queso chicken fajita rice skillet is a quick one-pan dinner made with tender chicken, peppers, seasoned rice, and creamy queso.


Ingredients

3 boneless skinless chicken breasts, diced

2 tablespoons olive oil

1/2 yellow onion, diced

1 red bell pepper, sliced

1 green bell pepper, sliced

1 orange bell pepper, sliced

1 packet fajita seasoning

2 cups minute rice

2 cups chicken broth

8 ounces tomato sauce

Queso cheese dip


Instructions

1. Heat oil and sauté onion and peppers.

2. Add chicken and fajita seasoning and cook until done.

3. Stir in rice, broth, and tomato sauce.

4. Simmer briefly, then remove from heat.

5. Top with queso and serve hot.

Notes

Use even-sized chicken pieces.

Cover skillet briefly if rice needs more time.

Leftovers reheat well.
