Description
Old-fashioned vegetable beef soup with tender shredded beef, potatoes, carrots, and mixed vegetables.
Ingredients
2 lb pot roast
2 russet potatoes, chopped
1 bag frozen seasoning blend
1 bag frozen peas
1 bag frozen green beans
1 bag frozen corn
4 large carrots, chopped
32 oz beef broth
2 cans tomato soup
1 can water
Salt and pepper to taste
Instructions
1. Slow cook beef until tender.
2. Shred beef.
3. Saute carrots and seasoning mix.
4. Add all ingredients to pot.
5. Simmer until vegetables are tender.
6. Adjust seasoning and serve.
Notes
Soup freezes very well.
Adjust liquid as needed.
