Description
Mushroom frittata made with eggs spinach tomatoes and cheese baked into a healthy and easy breakfast or brunch dish.
Ingredients
1 cup diced onion
1 cup spinach
1 cup cherry tomatoes
1/2 cup cheese
1/2 cup mushrooms
8 eggs
1/2 cup cream
1/2 teaspoon mustard
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
Instructions
1. Preheat oven to 350°F.
2. Add vegetables to pan.
3. Layer tomatoes cheese and mushrooms.
4. Whisk eggs cream and seasonings.
5. Pour over vegetables.
6. Bake 40 to 45 minutes.
7. Cool slice and serve.
Notes
Do not overbake.
Use fresh vegetables.
