Healthy Morning Glory Muffins packed with carrots, zucchini, coconut, and walnuts.
Ingredients
3/4 cup granulated sugar
2 1/4 cups all-purpose flour
1 1/2 tsp cinnamon
2 tsp baking soda
1/2 tsp salt
1/2 cup shredded coconut
1/2 cup chopped walnuts
1 cup grated zucchini
2 cups grated carrots
1/2 cup applesauce
1/2 cup maple syrup
3 eggs
1/2 cup avocado oil
1 tsp vanilla extract
Instructions
1. Mix dry ingredients.
2. Stir in vegetables.
3. Add wet ingredients.
4. Bake until set.
Notes
Wring moisture from zucchini.
Do not overmix.
