Ingredients
4 cups corn kernels
1 red bell pepper, diced
1/2 red onion, chopped
1 jalapeño, minced
1/2 cup cilantro, chopped
1 cup queso fresco or feta
1/4 tsp salt
1/4 tsp black pepper
1/4 cup mayonnaise
1/4 cup sour cream or Greek yogurt
Juice of 2 limes
1 tsp chili powder
1/2 tsp garlic powder
1/4 tsp cayenne
Instructions
1. Cook or prepare corn.
2. Combine salad ingredients.
3. Whisk dressing ingredients.
4. Toss together and chill.
5. Serve and enjoy.
Notes
Add cheese just before serving if making ahead.
Keeps refrigerated up to 3 days.
