Description
Mediterranean rice and beans made with chickpeas vegetables herbs and spices for a healthy one pot meal.
Ingredients
1 tablespoon olive oil
1 onion
3 garlic cloves
1 bell pepper
1 tomato
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon oregano
1 cup rice
2 cups broth
1 can beans
2 cups spinach
1 tablespoon lemon juice
2 tablespoons herbs
salt and pepper
Instructions
1. Heat oil and cook onion and garlic.
2. Add vegetables and spices.
3. Add rice and stir.
4. Add broth and cook 15 to 20 minutes.
5. Add beans and greens.
6. Finish with lemon and herbs.
7. Serve.
Notes
Use broth for more flavor.
Do not overcook rice.
