Description
A fresh and healthy Mediterranean chicken stir-fry made with tender chicken, colorful vegetables, olive oil, and herbs. Ready in 30 minutes and perfect for balanced dinners.
Ingredients
1 lb chicken breast, cut into pieces
2 tablespoons extra virgin olive oil
1 medium zucchini, sliced
1 large red bell pepper, sliced
1 medium red onion, sliced
1 cup cherry tomatoes
1/2 cup Kalamata olives
2 cloves garlic, minced
1/4 cup sun-dried tomatoes
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried thyme
2 tablespoons lemon juice
1/2 cup feta cheese
1/4 cup fresh parsley
Instructions
1. Cut chicken into bite-sized pieces.
2. Heat olive oil and cook chicken until golden and cooked through.
3. Remove chicken and set aside.
4. Sauté onion, garlic, zucchini, and peppers until tender.
5. Add chicken back to skillet with tomatoes and olives.
6. Season with herbs, salt, and pepper.
7. Heat through and remove from heat.
8. Add lemon juice and feta cheese.
9. Toss gently and garnish with parsley before serving.
Notes
Use fresh vegetables for best flavor.
Do not overcook vegetables to keep them crisp.
Add feta at the end to maintain texture.
Pairs well with rice, quinoa, or pita bread.
