Description
Mediterranean Baked Feta Eggs made with roasted tomatoes, spinach, feta cheese, and perfectly baked eggs for a healthy breakfast or brunch.
Ingredients
2 cups cherry or grape tomatoes
1 red bell pepper, diced
½ small red onion, diced
3 cloves garlic, minced
8 oz feta cheese
4 Tbsp olive oil
1 tsp dried oregano
1 tsp sea salt
½ tsp dried thyme
½ tsp ground black pepper
½ tsp red pepper flakes
1 cup chopped baby spinach
4 large eggs
Fresh basil or chives for topping (optional)
Instructions
1. Preheat oven to 400°F.
2. Divide vegetables and feta into ramekins or place all in one baking dish with feta in the center. Drizzle with olive oil.
3. Mix oregano, salt, thyme, pepper, and red pepper flakes. Sprinkle over feta and vegetables.
4. Bake for 25 minutes.
5. Stir to combine feta and vegetables, then add spinach.
6. Create wells and crack eggs into the dish.
7. Bake for an additional 10 minutes until eggs are set.
8. Top with fresh herbs and serve warm.
Notes
Serve with crusty bread or pita.
Adjust baking time for runnier or firmer yolks.
Add olives for extra Mediterranean flavor.
