Low Carb Creamy Tuscan Chicken made with tender chicken, spinach, sun-dried tomatoes, and a rich parmesan cream sauce. Perfect for keto dinners.
Ingredients
2 tablespoons olive oil
2 boneless skinless chicken breasts, halved
1 1/2 teaspoons lemon pepper seasoning
1/2 cup chopped onion
3 garlic cloves, minced
1/3 cup chicken broth
1 cup heavy cream
1/2 cup freshly grated Parmesan cheese
1/2 cup sun-dried tomatoes
1 teaspoon Italian seasoning
1/4 teaspoon garlic powder
4 cups baby spinach
Salt and pepper to taste
Instructions
1. Heat oil in skillet and cook seasoned chicken.
2. Remove chicken and cook onion and garlic.
3. Deglaze with chicken broth.
4. Add cream and Parmesan.
5. Stir in sun-dried tomatoes and seasoning.
6. Add spinach and wilt.
7. Return chicken, season, and serve.
Notes
Keep heat moderate when cooking cream.
Use freshly grated Parmesan.
