Description

Low Carb Chicken Taco Casserole made with tender chicken, cauliflower rice, taco seasoning, and melty cheese. An easy keto-friendly dinner the whole family will love.


Ingredients

1.5 lbs chicken tenders or breasts, cooked and chopped

3 cups frozen cauliflower rice

1 (10 oz) can Rotel diced tomatoes

1 oz packet taco seasoning

8 oz shredded Mexican cheese blend

1 tbsp olive oil

Optional toppings: avocado, lettuce, sour cream, olives, tomatoes, cilantro, hot sauce


Instructions

1. Cook chicken using preferred method and chop or shred.

2. Preheat oven to 350°F and grease a casserole dish.

3. Pan fry cauliflower rice in olive oil until lightly browned.

4. Combine chicken, cauliflower rice, tomatoes, and taco seasoning.

5. Transfer to baking dish and top with shredded cheese.

6. Bake for 15 minutes until cheese is melted.

7. Serve hot with desired toppings.

Notes

Use low carb taco seasoning for keto compliance.

Drain excess liquid from tomatoes if needed.

Let casserole rest briefly before serving.
