Description

Loaded Potato Taco Bowl made with crispy roasted potatoes, seasoned taco meat, beans, corn, and fresh toppings. A hearty, gluten-free dinner bowl.


Ingredients

4 medium russet potatoes, diced

2 tbsp olive oil

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

Salt and black pepper to taste

1 lb ground beef or turkey

1 tsp chili powder

1 tsp cumin

1 small red onion, chopped

1 (15 oz) can black beans, drained

1 cup corn kernels

1 cup shredded cheddar cheese

1 cup cherry tomatoes, halved

1 avocado, diced

¼ cup chopped cilantro

Lime wedges and sour cream for serving


Instructions

1. Roast seasoned potatoes until crispy.

2. Brown ground meat in skillet.

3. Add spices and onion and cook until soft.

4. Stir in beans and corn and heat through.

5. Assemble bowls with potatoes, meat, and toppings.

6. Serve with lime and sour cream.

Notes

Sweet potatoes can be substituted.

Store components separately for meal prep.

Add salsa or hot sauce if desired.
