Description

Bright and comforting lemony lentil soup made with red lentils, spices, and fresh lemon.


Ingredients

1 tbsp olive oil

1 medium white onion, diced

2 carrots, diced

5 garlic cloves, minced

6 cups vegetable stock

1 1/2 cups red lentils, rinsed

2/3 cup corn

2 tsp ground cumin

1 tsp curry powder

Pinch saffron and cayenne (optional)

Zest and juice of 1 lemon

Salt and black pepper to taste


Instructions

1. Saute onion and carrots.

2. Add garlic.

3. Add stock, lentils, corn, and spices.

4. Simmer until lentils are tender.

5. Blend if desired.

6. Stir in lemon zest and juice.

7. Season and serve.

Notes

Blend for a creamy texture or leave chunky.

Add lemon at the end for best flavor.
