Description
Moist lemon loaf recipe made with fresh lemon zest, lemon juice, and topped with sweet lemon icing. A homemade version of the classic Starbucks lemon loaf.
Ingredients
1 1/2 cups all purpose flour
1 1/2 teaspoons baking powder
1 tablespoon lemon zest
1/2 teaspoon salt
1/2 cup unsalted butter room temperature
1 cup sugar
2 large eggs
1 teaspoon vanilla extract
2 tablespoons lemon juice
1/2 cup buttermilk
1/4 cup lemon juice
3 tablespoons powdered sugar
1 cup powdered sugar
1 1/2 tablespoons lemon juice
1 tablespoon milk
Instructions
1. Preheat oven to 350°F and grease loaf pan.
2. Combine flour baking powder lemon zest and salt.
3. Cream butter and sugar until fluffy.
4. Add eggs one at a time then vanilla and lemon juice.
5. Alternate flour mixture and buttermilk until combined.
6. Pour batter into loaf pan.
7. Bake 45 to 55 minutes until golden.
8. Mix lemon juice and powdered sugar for syrup.
9. Brush syrup over warm cake.
10. Cool completely.
11. Mix icing ingredients.
12. Pour icing over cooled cake and let set.
Notes
Use fresh lemon zest for best flavor.
Brush lemon syrup while cake is warm.
Allow cake to cool before adding icing.
