Description
Homemade strawberry cake made with fresh strawberry reduction and strawberry cream cheese frosting. A moist strawberry layer cake perfect for celebrations.
Ingredients
3 cups strawberries
3/4 cup sour cream
1/4 cup milk
4 large eggs
1 teaspoon vanilla extract
2 1/2 cups all purpose flour
1 1/2 cups sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter
7 to 9 drops pink food color optional
2 cups freeze dried strawberries
16 oz cream cheese
3/4 cup butter
10 cups powdered sugar
1 teaspoon vanilla extract
Pinch salt
3/4 cup chopped strawberries
Instructions
1. Puree strawberries in a blender.
2. Cook the puree in a saucepan until reduced to 3/4 cup.
3. Allow the strawberry reduction to cool.
4. Preheat oven to 350°F and prepare three 8 inch cake pans.
5. Combine strawberry reduction sour cream milk eggs and vanilla.
6. Mix flour sugar baking powder baking soda and salt.
7. Add butter gradually until mixture resembles wet sand.
8. Add wet mixture and mix until smooth.
9. Divide batter into cake pans and bake 24 to 26 minutes.
10. Cool cakes completely.
11. Beat cream cheese and butter until smooth.
12. Add powdered sugar strawberry powder vanilla and salt.
13. Layer cake with frosting and chopped strawberries.
Notes
Allow strawberry reduction to cool completely before mixing batter.
Use freeze dried strawberries for strong flavor in frosting.
Store cake covered in refrigerator.
