Description

Elegant herbed ricotta stuffed chicken rolls filled with creamy ricotta, fresh herbs, and spinach, then baked in marinara sauce. Perfect for dinner parties or weeknight meals.


Ingredients

4 boneless, skinless chicken breasts

1 cup ricotta cheese

1/3 cup grated Parmesan cheese

2 cups fresh spinach

1/4 cup fresh basil, chopped

1/4 cup fresh parsley, chopped

1 tsp garlic powder

Salt & pepper, to taste

1 cup marinara sauce

2 Tbsp olive oil

1/2 tsp crushed red pepper flakes (optional)

Toothpicks or kitchen twine


Instructions

1. Preheat oven to 375°F.

2. Pound chicken breasts to even thickness.

3. Mix ricotta, cheese, herbs, spinach, and seasoning.

4. Fill and roll chicken; secure.

5. Sear rolls in olive oil until golden.

6. Transfer to baking dish and top with marinara.

7. Bake 20–25 minutes until cooked through.

8. Rest, slice, and serve.

Freeze unbaked rolls up to 2 months.
