Description
Healthy tomato zucchini pasta made with fresh vegetables, parmesan, and herbs. Easy vegetarian pasta ready in under 30 minutes.
Ingredients
2 medium zucchinis
2 cups cherry tomatoes
8 oz pasta
2 tbsp olive oil
1 tsp garlic powder
1 tsp black pepper
1 tsp fennel seeds
1/4 cup vegetable stock
1/2 tsp cayenne pepper (optional)
1 cup grated parmesan
Fresh basil or parsley
1/2 tsp red pepper flakes (optional)
Instructions
1. Cook pasta until al dente.
2. Sauté zucchini until golden.
3. Blister tomatoes with seasoning and stock.
4. Combine zucchini, pasta, and parmesan.
5. Reheat and serve with herbs.
