Description
Healthy strawberry oatmeal bars with crumbly oat layers and a sweet strawberry filling. Vegan, gluten free, dairy free, and naturally sweetened.
Ingredients
3 cups diced strawberries
1/4 cup maple syrup
1 Tbsp lemon juice
1–2 Tbsp lemon zest
Pinch of sea salt
2 Tbsp tapioca starch
1 1/2 cups rolled oats (gluten free)
1 1/2 cups almond flour
1/2 tsp baking soda
1/8 tsp sea salt
1/2 cup maple syrup
1/3 cup coconut oil, solid
1 tsp lemon juice
Instructions
1. Simmer strawberries with maple syrup, lemon juice, zest, and salt.
2. Stir in tapioca starch and thicken.
3. Preheat oven to 375°F and line baking dish.
4. Mix oats, almond flour, baking soda, and salt.
5. Add maple syrup, coconut oil, and lemon juice.
6. Press base into pan, top with strawberry layer.
7. Sprinkle remaining oat mixture on top.
8. Bake 20–25 minutes until golden.
9. Cool completely before slicing.
Notes
Cool completely for clean cuts.
Use drained frozen strawberries if needed.
Store refrigerated for best texture.
