Description
Healthy broccoli cheddar soup made high-protein with blended cottage cheese and milk. Creamy, comforting, and lighter than classic versions.
Ingredients
1 tablespoon butter
1 large yellow onion, diced
2 large carrots, diced
1 stalk celery, diced
2 cloves garlic, minced
1/4 cup all-purpose or gluten-free flour
1/2 teaspoon smoked paprika
3 cups vegetable broth
4 cups chopped broccoli
2 cups 1% milk
4 oz shredded cheddar cheese
1 cup blended low-fat cottage cheese
Salt and pepper to taste
Instructions
1. Sauté onion, carrots, and celery in butter.
2. Add garlic and cook briefly.
3. Stir in flour and paprika.
4. Add broth and broccoli; simmer until tender.
5. Stir in milk over low heat.
6. Add cottage cheese and cheddar.
7. Blend part of soup for creaminess.
8. Season and serve.
Notes
Keep heat low after adding milk.
Blend cottage cheese until smooth.
Reheat gently.
