Description

Healthy chocolate banana bread made with ripe bananas, oat flour, and cocoa powder. This moist oil-free, dairy-free, and gluten-free banana bread tastes like a rich fudgy brownie but is made with wholesome ingredients.


Ingredients

3 medium ripe bananas (about 12 oz / 360 g)

2 large eggs

1/4 cup nut butter (almond, peanut, cashew, or sunflower seed butter)

1/3 cup granular sweetener, monk fruit, or brown sugar

1 teaspoon vanilla extract

1/6 teaspoon sea salt

1 1/2 cups oat flour

1/2 cup cocoa powder

2 teaspoons baking powder

1/4 cup chocolate chips

Optional High Protein Version

1/2 cup protein powder (replace 1/2 cup of oat flour)


Instructions

1. Preheat oven to 350°F (180°C). Line a 20 cm (8 inch) loaf pan with parchment paper or lightly grease it.

2. In a large bowl mash the ripe bananas with a fork until completely smooth.

3. Add the eggs and nut butter to the mashed bananas and mix until fully combined.

4. Stir in the sweetener, vanilla extract, and sea salt. Whisk the mixture for about two minutes until smooth.

5. Add oat flour, cocoa powder, and baking powder to the bowl.

6. Mix until the batter is fully combined and smooth.

7. Fold the chocolate chips into the batter gently.

8. Pour the batter into the prepared loaf pan and smooth the top.

9. If desired sprinkle extra chocolate chips on top.

10. Bake for 30 to 40 minutes or until a toothpick inserted into the center comes out clean.

11. Allow the bread to cool in the pan for about 15 minutes.

12. Remove from the pan and cool completely before slicing.

Notes

Use very ripe bananas for natural sweetness and moisture.

You can replace up to 1/2 cup of oat flour with protein powder to increase protein content.

For best results use vegan protein or casein protein powder since whey may dry the bread.

Nutrition values vary depending on sweetener choice and optional protein powder.

Store banana bread in an airtight container for up to 3 days or freeze slices for longer storage.
