Description

Grilled Mediterranean veggie quesadillas made with zucchini, peppers, spinach, feta, and mozzarella. Healthy vegetarian dinner.


Ingredients

4 whole wheat tortillas

1 zucchini, sliced

1 red bell pepper, sliced

1 red onion, sliced

8 oz fresh spinach

1 cup cherry tomatoes, halved

1 cup feta cheese, crumbled

1 cup mozzarella cheese, shredded

2 tbsp olive oil

1 tsp dried oregano

1 tsp dried basil

2 cloves garlic, minced

Salt and pepper to taste


Instructions

1. Season and grill vegetables.

2. Sauté garlic and wilt spinach.

3. Assemble tortillas with veggies and cheese.

4. Grill quesadillas until golden and melted.

5. Slice and serve warm.

Notes

Serve with hummus or tzatziki.

Do not overfill tortillas.

Best enjoyed fresh.
