Description
Greek Sheet Pan Chicken Dinner is a healthy Mediterranean meal with lemon herb marinated chicken thighs, roasted vegetables, olives, and feta cheese, all cooked on one pan.
Ingredients
½ cup olive oil
1 lemon, juiced (about 3 tablespoons)
4 garlic cloves, minced
2 teaspoons dried oregano
1 teaspoon dried thyme
1 teaspoon Dijon mustard
1 teaspoon kosher salt
½ teaspoon black pepper
6 bone-in skin-on chicken thighs
1 medium zucchini, sliced
1 yellow bell pepper, chopped
½ large red onion, sliced
1 pint cherry or grape tomatoes
½ cup kalamata olives, pitted
¼ cup feta cheese
2 tablespoons fresh parsley, chopped
Instructions
1. Preheat oven to 425°F.
2. Whisk together oil, lemon juice, garlic, oregano, thyme, Dijon, salt, and pepper.
3. Toss chicken with two-thirds of the marinade and marinate 10–15 minutes.
4. Spread vegetables on a sheet pan and toss with remaining marinade.
5. Nestle chicken among vegetables and bake 30 minutes.
6. Add olives and feta and bake another 10–15 minutes until chicken reaches 165°F.
7. Garnish with parsley and serve.
Notes
If chicken isn’t golden, broil briefly at the end.
High-water vegetables release liquid during cooking.
Chicken breasts may be substituted with reduced cook time.
