Description
Fresh and healthy Greek chicken bowls made with lemon-marinated chicken, rice or quinoa, crisp vegetables, feta, and homemade tzatziki. Perfect for meal prep or easy dinners.
Ingredients
Chicken Marinade:
4 small chicken breasts (about 1¼ lb)
1/4 cup olive oil
1 Tbsp lemon zest
2 Tbsp lemon juice
2 Tbsp honey
1 tsp garlic powder
1 1/2 tsp dried oregano
1 1/2 tsp dried basil
1 tsp salt
1/4 tsp black pepper
1/2 tsp red pepper flakes
Bowls:
2 cups cooked rice or quinoa
2 cups cherry tomatoes, halved
2 cups diced cucumber
4 cups shredded romaine lettuce
1 cup sliced red onion
1/2 cup feta cheese
Tzatziki:
1 cup plain Greek yogurt
1/2 cup grated cucumber
1 Tbsp lemon juice
1 Tbsp olive oil
1 tsp minced garlic
1/4 tsp salt
1 Tbsp fresh dill, chopped
Instructions
1. Whisk together all marinade ingredients.
2. Pound chicken to 1/2-inch thickness and coat with marinade.
3. Marinate for at least 30 minutes.
4. Mix all tzatziki ingredients and refrigerate.
5. Prepare rice and vegetables.
6. Air fry chicken at 380°F for 7 minutes per side, or cook in skillet until internal temp reaches 165°F.
7. Rest chicken 5 minutes, then slice.
8. Assemble bowls with rice, veggies, chicken, feta, and tzatziki.
9. Serve with optional olive oil and lemon juice drizzle.
Notes
Great for meal prep.
Chicken can be grilled or baked.
Store components separately for best texture.
Add olives if desired.
