Soft and fluffy gluten-free apple cinnamon muffins with cinnamon sugar topping.
Ingredients
2 cups gluten-free flour
1 tbsp gluten-free baking powder
1/2 tsp salt
1 tsp cinnamon
3/4 cup sugar
8 tbsp melted butter
1/2 cup yogurt
3 eggs
1 tsp vanilla
2 cups diced apples
Instructions
1. Mix dry ingredients.
2. Mix wet ingredients.
3. Combine and fold in apples.
4. Rest batter.
5. Bake until golden.
Notes
Rest batter for best texture.
Use sweet apples.
