Description
Garlic Butter Chicken and Potatoes skillet made with tender chicken strips, golden baby potatoes, fresh herbs, and rich garlic butter. A quick 30-minute dinner.
Ingredients
1½ lb chicken breast, cut into strips
1½ lb baby yellow potatoes, quartered
1 Tbsp olive oil
3 Tbsp butter, divided
5 garlic cloves, minced
1 tsp fresh thyme
1 tsp fresh rosemary
1 tsp fresh oregano
Salt and pepper to taste
¼ cup low sodium soy sauce
1 Tbsp olive oil
1 Tbsp hot sauce
Fresh cracked pepper
Instructions
1. Marinate chicken in soy sauce, oil, hot sauce, and pepper.
2. Parboil potatoes for 8 minutes and drain.
3. Cook potatoes in oil and butter until golden; set aside.
4. Cook chicken with garlic in remaining butter.
5. Add marinade and herbs; cook through.
6. Return potatoes to skillet and toss.
7. Serve immediately.
Notes
Drain potatoes well before skillet cooking.
Use fresh herbs for best flavor.
Serve immediately for best texture.
