Description
A cozy Thai-inspired chicken soup made with coconut milk, ginger, red curry, and fresh vegetables.
Ingredients
1 lb chicken breasts, thinly sliced
1 can coconut milk
4 cups chicken broth
1 tbsp grated ginger
3 garlic cloves, minced
2 tbsp red curry paste
1 tbsp fish sauce
1 tbsp soy sauce
1 tbsp brown sugar
2 tbsp lime juice
2 cups mushrooms
1 cup red bell pepper
2 cups spinach
Cilantro, for garnish
Green onions, for garnish
Instructions
1. Sauté garlic and ginger.
2. Add curry paste and cook briefly.
3. Pour in broth and coconut milk.
4. Add chicken and vegetables.
5. Season with sauces and sugar.
6. Simmer until chicken is cooked.
7. Stir in spinach and lime juice.
8. Garnish and serve.
Notes
Adjust spice by adding more or less curry paste. Add noodles for a heartier soup.
